一、履行職責情況
主要是協(xié)助餐廳經(jīng)理做好前廳的日常內(nèi)部管理事務(wù),后幾個月(6、7、8、9月)因工作的需要及領(lǐng)導(dǎo)的信任和自身發(fā)展的需要,主要負責酒店的營銷工作;仡欉@幾個月來的工作,主要有以下幾個方面:
1、抓學習教育,激勵奮發(fā)向上
從任職以后,我在君御酒店分管內(nèi)部管理工作,了解君御酒店員工多數(shù)來于河北、安徽、湖南等不同地區(qū),文化水平和綜合素質(zhì)有很大差異,業(yè)務(wù)水平及服務(wù)意識不高,針對此種狀況,我把自己所看到的不足一一列出病單,進行全面性的培訓(xùn)和現(xiàn)場督導(dǎo)。糾正錯誤的管理方法,進行理論的講解及實踐的練習操作。從賓客一進店的規(guī)范禮貌用語、微笑服務(wù)以及職業(yè)道德的觀念、菜品搭配,規(guī)范八大技能實踐操作程序,通過學習,使員工加強服務(wù)質(zhì)量,提高業(yè)務(wù)服務(wù)水平,當賓客進店有迎聲,能主動、熱情地上前服務(wù),介紹酒店風味菜,當賓客點起煙,服務(wù)員應(yīng)及時呈上煙缸等。在四月份時,舉行了技能實操比賽,服務(wù)員潭麗燕獲得了技能比賽第一名的好成績。其他服務(wù)員通過活動比賽,養(yǎng)成了一個好的習慣,不懂就問,不懂就學,相互求教,也學到了很多知識,精神風貌也越來越好,提高了工作效率,不足的是操作細節(jié)還有待改善。2、抓管理建章立制
前期,餐廳很多工作存在問題,主要的毛病存在于沒有規(guī)范的制度,員工不明確制度,一些制度沒有具體的負責人進行落實等。通過質(zhì)檢部領(lǐng)導(dǎo)的指導(dǎo),我對羅列出衛(wèi)生工作制度上墻、音響的開關(guān)時間及負責人以及各崗位的服務(wù)流程、個人衛(wèi)生要求標準、收尾工作的注意事項,每天進行現(xiàn)場督導(dǎo)檢查,對員工加強工作意識,明確工作責任有很大幫助。后期電話費用高,配合高層經(jīng)理配置電話機盒,規(guī)定下班時間將電話鎖上,以及任何服務(wù)員一律不允許打市話等,杜絕了下班時間打市話的現(xiàn)象。3、抓內(nèi)部客戶的溝通
真誠地與客戶溝通,聽取他們的寶貴意見,不斷改進并協(xié)調(diào),及時將客戶反饋的信息反饋給廚房,如,有時客戶反饋“阿美小炒肉”分量不足,“沸騰魚”不夠香等等,通過客戶的真誠反饋,再加上我們認真的討論、修改,不斷地提高菜肴的質(zhì)量,令顧客滿意。4、抓宴席的接待及管理宣傳工作金秋十月是婚宴的黃金季節(jié),制定婚宴方案,向周邊的單位發(fā)放宣傳單進行走訪工作,目前,我承接了10月份的五場婚宴工作,向前來的賓客介紹餐廳的各種優(yōu)勢,對婚慶公司進行電話溝通,對外宣傳酒店規(guī)模等,計劃性地對宴席接待做好充分的準備工作。5、抓團隊用餐
利用每周六、日、一與30多家旅行團電話溝通及接待團餐,目前前來旅行團消費最多的是旅行社、旅行社、國旅、旅行社等,通過接待團餐,第一為餐廳增添了人氣,第二為廚房減少了成本費用。并利用接待團餐的機會,認真咨詢反饋,做好信息的反饋統(tǒng)計工作。二、未來努力方向
在工作中深感自己的不足,今后我將朝這幾個方面努力:
1、不斷學習,提高自己,加強銷售的業(yè)務(wù)知識及各方面的知識學習。2、認真做好本崗位工作的同時,不斷開發(fā)新的客戶群體。3、做好內(nèi)部客戶的維護及溝通工作。4、有計劃性地安排好營銷工作。
5、做好客戶統(tǒng)計資料,不斷地加強聯(lián)系,做好客戶投訴處理工作及反饋信息工作。6、密切配合酒店銷售部接餐及接待服務(wù)。
