一年來，在集團的正確領導和親切關懷下，在全體員工的共同努力下，我中心克服了食品原材料價格猛漲和用工成本激增的雙重巨大壓力，堅持學生食堂飯菜價格不上漲，強有力地保障了學校穩(wěn)定工作，較好地完成了全年的工作任務。為了在新的一年發(fā)揚成績，彌補不足，現將全年工作總結如下：

一、積極倡導敬業(yè)奉獻精神，狠抓組織紀律管理，力求管理水平不斷提升

組織紀律性是餐飲各項工作的基本保證。在中心的積極倡導與要求下，中心職工繼續(xù)發(fā)揚了遵守紀律、無私奉獻的精神，任勞任怨，確保了各項服務保障工作按時按質完成。

一年來職工積極參加中心組織的各種會議，認真領會上級單位的精神和指示并加以貫徹；中心全體正式員工每周末多上一天班，確保了每天一線均有負責同志在崗；各餐廳經理每天清早提前一小時到崗，認真檢查早餐準備和銷售情況，中午和晚上開餐時間也都堅守在工作崗位，平均每天在崗時間超過11個小時；采購組員工不論嚴寒酷暑，無論雙休日與節(jié)假日，每天早上六、七點上崗，認真驗收配送餐廳所需物資；微機房工作人員認真遵守倒班制度，從早6：00到晚10：00，從未出現過空崗現象，為學生餐廳、聚博園和校內超市的銷售工作做好了卡機服務保障工作。

做到了看好自己的門，管好自己的人，辦好自己的事。一年里

沒有發(fā)現將公家東西拿回自己家的損公肥私現象，表現出了職工的優(yōu)秀品質和中心的良好風氣。

二、牢固樹立為師生員工服務的意識，重視服務對象的需求狀況，力爭提高廣大師生的滿意度

中心積極參加集團組織的師生代表座談會，認真聽取學生管理部門和各院系學生代表的意見和建議，通過加強與服務對象的溝通交流，進一步了解了學生的需求，及時對各項工作了進行調整。各餐廳經理都有很強的競爭意識，他們想方設法吸引學生到自己餐廳來，他們努力在飯菜質量、花色品種、就餐環(huán)境和飯菜保溫上下功夫，努力提高學生就餐率。

一餐廳大膽創(chuàng)新，合理利用閑操作間，優(yōu)化加工炒制和銷售流程，推出精品家常菜窗口，中鍋炒制，隨炒隨上，深受廣大師生歡迎；二餐廳定期更新飯菜品種，營業(yè)額逐步上升，屢創(chuàng)新高；三餐廳一、二樓在天冷之際，推出砂鍋項目，每天就餐師生絡繹不絕；聚緣閣餐廳加強營銷與服務，充分發(fā)揮自身技術優(yōu)勢搞好小炒與宴會項目，還配合校團委順利完成新年學生包餃子聯歡活動的任務；科技餐廳自下半年以來，堅持做好夜宵項目，努力為下晚自習學生提供安全可口的小吃，受到科技學院師生的好評。

三、重視采購工作，千方百計控制進貨成本，為餐廳贏利打下良好基礎

采購工作是餐飲中心成本控制的關鍵一環(huán)。采購到物美價廉的物資，不僅關系到餐廳成本高低，更關系到廣大師生的身體健康，因此，中心極為重視采購驗收工作。采購組肩負著各餐廳除米面油

菜之外的所有物資采購供應工作，一年里，采購組職工不辭辛苦、勤轉市場、貨比三家、討價還價，努力降低采購成本；對所采購物資嚴格驗收把關，堅決不讓無證不合格產品流入餐廳。在數次市防疫部門對我中心采購工作的檢查中，均未發(fā)現不合格問題，受到了防疫部門的好評。

四、積極想方設法，克服成本壓力，實現了餐廳毛利率不降低下半年以來，受國內外多種因素影響，全國包括我市以農產品為主的食品原材料價格上漲迅猛，價格總水平逐月攀升，與去年同期相比，我中心采購的食品原材料平均漲幅在20%以上，特別是蔬菜價格平均漲幅在60%以上。這無疑極大地增加了以上述物資為主要原材料的餐廳的運行成本壓力�，F餐廳所售主食均為保本或虧本供應。盡管面對重重困難，各餐廳在經理帶領下，在全體員工共同努力下，精打細算、厲行節(jié)約、推陳出新，提高產品附加值，實現了相比去年毛利率不降低的好成績。

五、認真落實集團“安全生產月”活動，加強安全管理，力爭將隱患消滅在萌芽狀態(tài)

自201*年10月1日至10月31日，中心開展了為期一個月的“安全生產月”活動，集中力量對安全生產工作進行了全面檢查，對查出安全生產管理方面和設備設施方面的安全隱患，認真整改；嚴格按照河北省教育廳《關于在全省高等學校開展乳制品專項治理工作的通知》精神，認真排查，嚴把進貨關，徹底杜絕了有害乳制品流入餐廳;積極組織餐廳員工參加學校組織的消防演習，力爭做到讓每個新招聘員工均參加過演習，懂得基本消防知識，掌握撲救初

期火災的能力。

六、積極探索，認真論證，為三餐廳改革試點工作精心籌備方案

為滿足廣大師生日益多元化的就餐需求，提高學生就餐率，集團決定以第三餐廳為試點，全力推進餐飲服務中心的改革工作。餐飲服務中心全力配合集團此項重點工作，先后到西安、重慶、北京以及本市一些高校做細致調研，聯系專業(yè)餐飲公司來商討合作事宜，聘請專業(yè)施工單位和廚具廠商對餐廳改造進行預算，為最終決策提供切實依據。

盡管過去的一年取得了一定的成績，我中心的工作也暴露了一些不足：三餐廳一層炸食間因操作不當原因起火，造成了一定的經濟損失和不良影響，這也給我們敲響了警鐘：安全工作必須常抓不懈；針對員工服務態(tài)度的投訴呈上升趨勢，暴露了員工服務意識有待加強培訓的問題。

展望新的一年，我們深感任重道遠，但是，不管面對多大的艱難險阻，我們有信心、有決心，在集團的正確領導下，在全體員工的積極努力下，把中心工作辦得紅紅火火，努力將各項工作提高到一個新層面，爭取201*年我們再創(chuàng)佳績。
